Bar Trove Opens in Heritage Landmark as Edmonton's Dining Scene Flourishes

Edmonton proudly welcomes Bar Trove, which opened its doors on June 6 in the ground-floor space of the restored Canada Permanent Building in the city's downtown core. Co-founded by Brittany Schulz and Lauren Kyle-McDavid — interior designer and wife of Edmonton Oilers captain Connor McDavid — Bar Trove, along with Trove Living, spans 7,000 sq ft over two floors, channeling the elegance of a Parisian department store. 

Exposed heritage brick, warm wood tones, brass accents and artful lighting create an elevated yet welcoming European-inspired, design-driven atmosphere. Guests are greeted by a luxuriously back-lit bar wall framing the handcrafted cocktail program, while Trove Living's curated furniture showroom occupies the second floor and the Kyle + Co. Design studio is situated on the third.

The menu at Bar Trove offers a contemporary take on European classics, with standout offerings like Caviar Service, Lobster Linguini, Oysters, and other seasonal favourites, as well as playful dishes like Caviar Chicken Nuggets, alongside an expansive wine offering. This stylish culinary destination is already making waves, having drawn both design enthusiasts and hockey fans during its opening week.

Bar Trove's arrival coincides with an exceptional wave of restaurant openings across Edmonton, each bringing a distinctive flavour and sense of place to the city's dining scene:

Bernadette's is Edmonton's first Indigenous fine-dining restaurant, offering an intimate, elegant space. Boasting a striking hand-painted Indigenous mural and serving seasonal and traditional dishes inspired by Chef Scott Iserhoff's Attawapiskat heritage like Saskatoon berry brisket, wild game, bannock, dumplings and foraged local ingredients, the restaurant is revolutionary for Indigenous cooking.

MSSM (Miso, Sesame, Soy, Multe) is a refined omakase experience created by Michelin-starred Chef Masaki Saito and his team, bringing traditional Tokyo-style edomae sushi to Edmonton's ICE District. Inspired by Saito's acclaimed restaurants in Toronto and New York, MSSM offers a meticulously crafted, intimate dining journey that reflects Edmonton's growing appetite for precision-driven, world-class cuisine.

Bar Henry is a European-style aperitivo bar tucked beside the Henry Singer flagship store in the ICE District's Stantec Tower. Designed by restaurateur and chef Daniel Costa, it draws from Northern Italian traditions, featuring elegant cocktail and wine offerings with curated bar snacks. Its modern Italian design, bold reds, crisp martinis and cozy ambiance complement the fashion-forward flagship setting.

Another venue by Chef Daniel Costa, Olia is a warm and inviting Italian ristorante in downtown Edmonton. The restaurant features a simple, seasonal menu of house-made pasta, antipasti, primi and secondi inspired by traditional Italian cooking, complemented by an exclusively Italian wine list and classic cocktails. With minimalist décor, soft lighting, and a focus on genuine hospitality, Olia offers an elegant yet approachable dining experience rooted in the spirit of Italy.

Gordon Ramsay is also set to make his mark on the region with the first-ever Canadian location of his famed Hell's Kitchen restaurant, opening at River Cree Resort & Casino on Enoch Cree Nation near Edmonton in early 2026. Known for its bold flavours, signature dishes like Beef Wellington and sticky toffee pudding, and the high-energy atmosphere made famous by the hit television series, Hell's Kitchen will bring a globally recognized dining experience to the area, adding another exciting chapter to Edmonton's rapidly expanding culinary landscape.

Collectively, these new venues signal a dynamic new era for Edmonton's downtown dining scene. Bar Trove, with its design-led elegance, adds a fresh chapter to this story, inviting locals and visitors alike to savour the city's evolving culinary identity.
